Ah! It’s the day before Christmas and we are nowhere near ready for the big man to arrive tonight!! There’s still presents to wrap, the turkey to baste, crackers to crack and oh who’s going to pick up Grandad from the airport!?

If you’re anything like us and you’ve let Christmas creep up on you once again, don’t stress. You’ve the same amount of hours in the day as Beyonce, we can do this. Here’s our super easy last-minute mince pie recipe to get one more thing ticked off that Christmas to-do list! (Adapted from Woman and Home)


Makes 24
275g all-butter shortcrust pastry
1 x 411g jar luxury mincemeat
1 Orange (zest)
1 Egg (beaten, to glaze)
Icing Sugar (to dust)

You’ll also need 2x 12 hole mini muffin tins.

Preheat your oven to 180C. Roll out your pre-made (makes life so easy) pastry and cut out 24 circles and 24 snowflakes, stars and other festive shapes. In a bowl, mix the mincemeat and orange zest and then add one teaspoon to each pastry circle. Top with your pre-cut pastry shapes and then lightly brush with the beaten egg to glaze. Bake for up to 20 minutes or until the pastry is a golden brown. Allow the pies to cool in the tin before removing them and make sure the filling is nice and cool before serving to kids. Serve dusted with icing sugar, ice cream or a yummy vanilla custard!
